Pork Menudo Recipe

Ingredients:
1/2 kilo pork including its fats (cut into about half inch cubes)
1/2 kilo pork liver (cut into about half inch cubes)
2 pieces hotdog (optional)
1/2 cup tomato sauce
2 pieces potatoes (cut into small cubes)
1 piece carrot (cut into small cubes)
1/2 cup raisins
2 pieces of red or green bell pepper (chopped)
4 cloves garlic (chopped)
1 bulb red onion (sliced)
1 tablespoon atsuete seeds
1-2 cup water
3 tablespoon cooking oil
Fish sauce (patis) for seasoning
Cooking Procedures:
In a deep pan, sauté onion, garlic and bell peppers.
Add the pork and stir-fry until meat turns white.
Add the tomato sauce and water just enough to cover the meat. Cook until it boils then reduce heat and simmer until pork is tender.
Add the liver, hotdog, carrots, and potatoes. Cover the pan and simmer for at least ten minutes or until the vegetables and liver is tender. (Important: don’t overcook the liver so it won’t turn hard.)
Add the raisins and mix. Continue simmer for another two minutes.
Finally, season with fish sauce according to taste.
Serve hot and enjoy your pork menudo!
